Emulsifying Agents And Types Of Emulsifiers

Emulsifying agents are soluble in fat and water to allow uniform dispersion of fat in water. Emulsifying agents are also called emulsifiers and present in the food like butter, mayonnaise and salad dressing. These have one hydrophilic and one lipophilic part. These agents surrounds the oil droplets in water and reduces the tension between the two liquids thus impart stability.

Classification of Emulsifiers
These can be classified on the basis of chemical structure and mechanism of action. Under chemical structure category are synthetic, natural, auxiliary agents and finely dispersed solids. In the category of mechanism of action comes the monomolecular, multimolecular and solid particle films.

Natural emulsifying agents are derived from plant and animal tissues and mostly in the form of hydrated lypophilic colloids. These emulsifiers make the protective sheath around the droplets, give droplets a charge so that they repel each other and swell to step-up the viscosity of the liquid.

Natural ones are derived from vegetables, animals, semi synthetic and synthetic agents. Although natural agents are inexpensive, safe and non toxic but these are slow in action. So large quantity of emulsifier is required for proper action. Also the natural emulsifiers need preservatives as these are subjected to microbial growth.

The animal derivatives are stronger than the plant ones. The best example of this is lecithin and cholesterol. Some people are allergic to these so must be consumed after knowing the derivatives.

Both semi-synthetic and synthetic emulsifying agents are strong and require no preservative as these are not prone to microbial growth.

Applications of Emulsifying Agents
Emulsifiers are used in many types of food for stability and to reduce tension. Like vinaigrette if prepared only with oil and vinegar leads to unstable emulsion. To stabilize mayonnaise egg yolk lecithin is used as emulsifiers. Both natural as well as synthetic emulsifiers are used in food industry. Egg, soybean, rapeseed oil and palm oil are the common natural agents. Dairy products like cheese and ice creams use the emulsifying agents to improve the texture. Also the crystallization of candies is improved by them. Jarred peanut-butter and sauces are given more life with the use of correct emulsifier.

It is extensively used in pharmaceutical industry to make medicines more good to taste and easy to take. In pharmaceutical oil and water emulsions are basically used. These are also used in other industries like agriculture, paints and inks. Fertilizers and pesticides are given more stability with these.

Harmful Effects
Although the one used in food are completely safe and more over natural ones are safer than synthetic. But in some cosmetics certain harmful emulsifiers like polyethylene glycol (PEG) compounds, have been found that are carcinogenic. Also the emulsifying agents in body care products causes mild or severe allergies of skin.

Beekeeper Hat Fashion Or Function

So, I see that you are planning to take up beekeeping. Well, you are undertaking a noble occupation. The point is that beekeeping is very important for agriculture on the whole, and not just for honey production. As bees fly about and collect nectar from the flowers to produce honey and for their own food, they also pollinate the flowers which later turn into the fruits and vegetables that we eat. People rarely realize the important role that bees and beekeepers play in agriculture. With this said, beekeeping is also very dangerous and can even be fatal if you do not have the proper protective clothing when you tend your hives. The most important article of protective clothing is the beekeeper hat.

The beekeeper hat is a special hat that is made especially for beekeepers to wear when they tend their hives. The beekeeper hat is usually white in color and has a wide rim around it which spans about six inches outward. The hat also has a veil that drapes down from the rim. The rim is made form some rigid material that can hold the veil. The veil is made from a fine transparent netting that you need to be held away from your face. The veil is to be draped down from the rim and then are tied around the collar of your protective jacket.

Other protective clothing besides the beekeeper hat is also needed to keep the exposed parts of your body from being stung. The face is the most sensitive exposed part of your body, hence this is why how the beekeeper hat is worn is very important. The veil should never touch your face. This can allow for the bees stinger to penetrate the netting and sting you in the face. Furthermore, the bottom of the veil should be snugly tied around the collar of the protective coat to prevent bees from getting up under the veil and stinging you.

The protective coat and pants should all be light colors, preferably white. There is an important reason why protective clothing needs to be white. Dark colors can trigger defensive pheromones in the bees to make them aggressive. This is because most of the bees natural predators, such as bears, are all dark in color, either dark brown or black and furry. If you wear white clothing which is made of smooth material, the bees will not recognize you as a threat as much and therefore will be less aggressive.

The protective clothing should be loosely fitted and worn over other clothing to give you good protective layers of protection from bee stings. Furthermore, all seams of the protective clothing should overlap and snugly be fitted to keep bees from entering in under the clothing through the seems. You should also wash your protective clothing, including the beekeeper hat after tending the hive. You need to understand that as you harvest the honey, the bees will defend it and will at least sting your protective clothing. As the bees sting, the venom released from the stinger is not the only thing that is released from the stinger. As a bee leaves its stinger in your protective clothing, it will also release pheromones that will be on the clothing that will make the other bees be more aggressive when they sense them on your clothing.

The cricket suit can be a great alternative to the beekeeper hat and other protective clothing needed for tending the hives and harvesting the honey. The cricket suit is a rather new invention when it comes to protective clothing for beekeepers and makes it even more difficult for bees to get under the protective clothing through the seems. This suit actually looks like an astronauts suit with a hood and is all white. The hood of the cricket suit serves the same function as the beekeeper hat, but is of a different construction. The hood has a screen in front, allowing you to see what you are doing and has removable plastic rods that hold the hood outward and away from your face, hair, and the back of your head. The plastic rods can be removed from their sleeves simply by opening velcro straps and sliding them out of their sleeves. Then the hood can be washed with the rest of the cricket suit.

Furthermore, you do not need to tie anything with the cricket suit. The hood can be removed, allowed to hang back, or kept over the head by a zipper that fastens it to the collar of the suit. Where the zipper meets the end is sealed with a velcro flat to keep bees from entering through the hole. Furthermore, the rest of the cricket suit is a one-piece suit that is zipped closed in front. This provides for seamless protection from top to bottom. Best of all, you can adjust the cuffs of the wrists and ankles with velcro to make sure that the cuffs are snug and bees cannot get up through the sleeves.

Leather gloves may not necessarily be worn by seasoned veteran beekeepers who already have hands that are immune to the venom of bee stings, as a beginner, you should have them. They protect your hands from being stung when you reach into the hive to harvest the honey.

Whether you get the beekeeper hat or other the cricket suit, you definitely should look into getting good reliable protective clothing to wear while tending your hive. Remember, this protective clothing can save your live. This is especially true if you are allergic to bees. Even for normal people, being stung by a large number of bees can land you in the hospital for a few days, or can even be worse. So, remember, wear protective clothing!

Eleven Million in Sahel Face Severe Food Insecurity

A U.N. agency says 11 million people in Africas Sahel region still face severe food insecurity. At the same time, an emergency appeal for 113 million dollars has gone largely unmet.

De Capua report on Sahel food insecurity
The Food and Agriculture Organization says the Sahel has faced food insecurity crises in 2005, 2008 and again in 2012. Those crises, it says, have eroded the capacity of the poor to maintain or restore their livelihoods.

In Dakar, Patrick David, FAOs deputy coordinator for food security analysis for West Africa and the Sahel, said, There is still a lot of people in food insecurity. The people more and more find some difficulty to recover from the past crisis even if there is a good harvest because there have been pretty good harvests in 2012.

David said many people in the Sahel depend on a few cattle and a small piece of land for survival. So, its hard for them to stock up any reserve food or agricultural supplies in the event of drought, conflict or bad harvest.

While before it would take one or two years to recover, now its longer for those people to recover. Its difficult to restock cattle, for example. Its difficult for them to access agricultural credit to have good input[s] and to have fertilizer. And in some places in the Sahel, like in Burkina Faso and Niger, there [are] some dense populated area[s] where there is degradation of land and the loss of soil fertility. That means their agricultural
yield[s] are decreasing year by year, he said.

That compounds the problems they already face as the price for grains, such as sorghum, millet and maize, continues to rise.

David said, The poor and the very poor households, as soon as theyve exhausted their little harvest, totally depend [on] the market. So they have to buy the grain at higher and higher prices. So their purchasing power is decreasing every year.

Insecurity, such as the recent conflict in northern Mali, can also boost prices because agricultural products cannot get to market.

The FAO has appealed for $113 million for its programs in the Sahel. However, its only received less that $19.5 million so far.

The intervention of FAO strengthens the resilience of the affected households. But when the affected households cannot receive the good seeds and the good fertilizer or cannot recapitalize their livestock, they stay very vulnerable and its a problem for the next year. So we definitely need additional support for the farmers and agriculture in order to decrease the impact of the forthcoming crisis, he said.

Building resilience includes improving the storage, processing and transportation of goods as well as livestock food supplements, animal health campaigns and herd restocking. The Food and Agriculture Organization programs also include fixing irrigation systems.

The FAO said it would like these programs to be in place and making a difference during the next growing season which runs from October through April
